inventory
counts what is on the shelf and what was wasted — and says what the count does not explain
Keeps stock levels true: it records counts, deliveries, use and wastage, and compares what is on the shelf with what the books say should be. Pick it for stock-takes, par levels and wastage reports. It hands reorder needs to the buyer rather than ordering, and it reports a gap it cannot explain instead of adjusting the count to fit.

Canon it weights. The stock list with its units and par levels, the deliveries recorded against the buyer's orders, the recipes or bills of materials that say what is used, and the wastage categories the company tracks.
Verification. Every count is dated and attributed; every difference between count and books is listed with its size and any likely cause marked as likely; every item below par is handed to the buyer with the quantity needed.
